Chili garlic oil is a staple in Asian cuisine, known for its deep aroma, spicy kick, and versatility. This Korean-inspired version combines two types of red chili flakes and fried garlic with toasted sesame oil to create a flavor-packed oil perfect for elevating any dish.

Ingredients:

  • 1 cup vegetable oil

  • 1 cup toasted sesame oil

  • 1/2 cup red pepper flakes

  • 1/2 cup Korean Taekyung red pepper flakes

  • 1 cup fried garlic

Step-by-Step: How to Make Korean Chili Garlic Oil

  1. Heat the oils:

    • In a saucepan over medium heat, combine the vegetable oil and toasted sesame oil.

    • Heat until the temperature reaches 270°F (130°C). Use a kitchen thermometer to ensure you don’t overheat the oil.

  2. Incorporate the chili flakes:

    • Turn off the heat and add the red pepper flakes and Korean Taekyung red pepper flakes to the hot oil.

    • Stir well to allow the chilies to release their aroma and color into the oil.

  3. Add the fried garlic:

    • With the heat still off, add the fried garlic to the oil and stir to distribute it evenly.

  4. Cool the oil:

    • Let the oil sit at room temperature until it cools completely. This step allows the flavors to meld together even more.

  5. Store it:

    • Transfer the oil to a clean glass jar (like a mason jar) and store it in a cool, dark place.

Tips for Use:

  • On rice and noodles: Add a spoonful for a spicy and aromatic touch.

  • For marinades: Use the oil as a base for marinating meats or tofu.

  • In soups: Drizzle a few drops just before serving to enhance flavor.

  • As a dressing: Mix with soy sauce and rice vinegar for a delicious dressing.

Why Use Taekyung Chili Flakes?

Korean Taekyung chili flakes (gochugaru) are milder than other chili flakes and have a slightly sweet, smoky flavor that balances the heat. They are essential for creating an oil that is not just spicy but also rich and complex in flavor.

Storage:

This oil can be stored for up to 1 month in the refrigerator if kept in an airtight container. Always use clean utensils when serving to avoid contamination.

Give It a Try!

Korean chili garlic oil is an easy way to transform everyday dishes into flavorful experiences. Feel free to adjust it to your preferred spice level or even experiment with additional ingredients like ginger or green onions to make it your own.

Enjoy, my friends!
