Barrel Roasted BBQ Chicken




Welcome to another episode of Cooking with Charcoal!Today we bring you a very simple and flavorful recipe, perfect to make in collaboration with our friends from Grills El Barril. We’ll be using their innovative barrel roaster to prepare a delicious Charcoal-Grilled Chicken, butterflied and cooked to perfection with a simple seasoning that enhances the smoky flavors of the charcoal.


Ingredients:

  • 1 whole chicken (approximately 4-5 lbs), butterflied (cut open in half)

  • 2 tablespoons of table salt

  • 1 tablespoon of garlic powder

  • 1 tablespoon of onion powder

  • 1 tablespoon of sweet paprika

  • 1 tablespoon of dried oregano

  • 1 teaspoon of ground cumin

  • 1 teaspoon of ground black pepper




Instructions:


  1. Prepare the seasoning:In a small bowl, mix the salt, garlic powder, onion powder, sweet paprika, oregano, cumin, and black pepper. Combine everything well.


  2. Season the chicken:Place the butterflied chicken on a clean surface. Rub the seasoning mixture all over the chicken, making sure to cover both the inside and outside well.Let it marinate in the refrigerator for at least 2 hours, or better yet, overnight.


  3. Prepare the barrel roaster:Preheat your barrel roaster by filling the firebox with charcoal. Ensure the fire is strong at first to sear the chicken.


  4. Place the chicken:Insert a BBQ hook into the top of the chicken and hang it inside the barrel. Make sure the chicken is securely hanging.


  5. Cook:Cook the chicken for about 1.5 to 2 hours, rotating it occasionally to ensure even cooking. The chicken should reach an internal temperature of 165°F (74°C).


  6. Serve:Remove the chicken from the barrel and let it rest for 10 minutes before carving. Enjoy this juicy and flavorful charcoal-grilled chicken!
