Woodfire Roasted Pumpkin Budin

In collaboration with Chef Edgardo Noel, inspired by his book "La Cocina del Nieto".*

This special version of pumpkin pudding takes the flavor to the next level by roasting the pumpkin whole on the Kankay Monster. This method enhances the natural sweetness of the pumpkin with a smoky touch, and with the help of the Twin Temp Spike by ThermoPro, we achieved perfect temperature control throughout the process.

Serves: Approximately 8 portions

Ingredients:

  • 3 cups of roasted pumpkin puree (675 g)

  • 3 oz of melted butter (85 g)

  • 4 oz of all-purpose flour (115 g)

  • 1 teaspoon of ground cinnamon

  • ¾ teaspoon of salt

  • ¾ cup of sugar (150 g)

  • 4 oz of milk (120 ml)

  • 5 eggs

Instructions:

  1. Roasting the whole pumpkin:

    • Wash the pumpkin thoroughly and place it whole, with the skin on, directly onto the grill of the Kankay Monster.

    • Use the Twin Temp Spike by ThermoPro to maintain a stable temperature of 350°F.

    • Roast the pumpkin for 1.5 to 2 hours, or until it feels completely soft when touched. The time may vary depending on the size of the pumpkin.

    • Once done, remove the pumpkin from the grill, allow it to cool, and scoop out the flesh with a spoon. Mash it into a smooth puree.

  2. Preparing the mixture:

    • In a large bowl, combine the roasted pumpkin puree, melted butter, flour, cinnamon, and salt until well blended.

    • Add the sugar, milk, and eggs. Mix until smooth and fully incorporated.

  3. Baking the pudding:

    • Pour the mixture into a greased baking pan.

    • Bake in a preheated oven at 350°F for 45 minutes, or until the pudding is set and golden brown.

  4. Serving:

    • Let the pudding cool before serving. Garnish with cinnamon sticks or a light dusting of powdered sugar if desired.
